some of those recipes from my family that have traveled down through the years.

Leftover Mash Potato Pancakes
I love these pancakes. You make them a little bigger the the dollar size pancakes. They are great for using leftover mash potatoes and are used in place of potatoes at a meal.. Or in place of hash browns at breakfast..

1 c leftover mashed potato
1 c all-purpose flour
milk
1 egg
salt and pepper
1/4 c finely chopped onion

 

Combine mashed potato, salt, pepper and flour. Beat egg
and add to mixture with just enough milk to make a batter that will drop
from a spoon. Drop by tablespoonfuls onto a hot griddle or skillet.

Cook over medium heat for 3 to 4 minutes on each side.
Serves 6 to 8.
